Hummmm.... I love roast pork, tried making couple of times but sometime successful and sometime not, I think one of the reasons is because we didn't commercial oven to do it. I actually checked with the chef in Marco Polo that night, he said if you want crispy skin roast pork you must have a commercial over. Well, if you don't agree with me, can you please give me SM's recipe and I'll try again on my side.

Oops sorry I did not check the comments. OK will get the recipe for you! I am sure you can get crackling using a home oven..... Then again I am only a pilot.
Thanks for your help....crackling or not is not your worries....I think it's mine. Like you said you are a pilot and not a cook. Just give me the recipe and see whether it works, if not then I think must be the oven.
